Meet Kevin Tien
Set to open in Capitol Hill in fall 2019, Emilie's is the latest restaurant by chef Kevin Tien, who is an alum of D.C. heavyweights Pineapple and Pearls and Oyamel. Kevin's debut restaurant Himitsu opened to wide acclaim in late 2015. It was named by Eater D.C. as Restaurant of the Year in 2017, and landed in the fourth spot on Washingtonian's 100 Best restaurants ranking in 2018. Only early in his 30s, Kevin has already been nominated for multiple James Beard Awards, and was most recently a 2019 semifinalist for Best Chef: Mid-Atlantic.
People and memories
Emilie's is inspired by a late "uncle" of Kevin's who was of German descent and had the family name Emilie, as well as by Kevin's fiancée Emily. Uncle Emilie took Kevin's family in after they moved to the U.S. at the end of the Vietnam War, and helped them find their way in America and raised all the kids as if they were his own. Emilie's will pay homage to two amazing people who have impacted Kevin's life. The restaurant is for them.
Carts, carts, carts
Now under construction at the corner of 11th St and Penn Ave, Emilie's will be designed around the idea of creating moments with friends and family around shared plates of all sizes. As you dine, about 10 or so dishes including small plates, pastas, larger entrées and desserts, will circulate the room on carts. This style of service is not meant to be rushed as it will take approximately an hour to see all of the deliciously fresh courses. The kitchen gets to play with food and you get to play along with us. This style of service is inspired by State Bird Provisions in San Francisco, pictured on the left.
A nightly a la carte menu will also be available that focuses on seasonally inspired and local cuisine. This allows us to support our community of producers, farmers, and ranchers. Let's say the chive blossoms are at their best – we can put them on the menu tonight. Say a fisherman caught something special – you can have it for dinner. An in-house fermentation program will be in place to fully take advantage of local ingredients, capturing flavors at their peak and preserve them for the off season. A restaurant for all purposes
Himitsu is small restaurant with limited space, and there has been constant feedback to make it more accessible. We heard you, and Emilie's is going to be much bigger! With a spacious 100-person dining room and comfortable bar and lounge, Emilie's invites everyone to enjoy Kevin's food in a relaxed, cozy setting. The restaurant, along with an additional event space next door, can be rented out for private events of all sizes. We welcome you to celebrate any and all occasions with us.
